And you did what with it?


We did do a pork roast last night, after all we do have more than a little fresh loin available.



 


That was what was left after I removed the bones and the slices for dinner.



That is a slice with two of the rib bones, those are finger food by the way. The bones not the slice.


That is the starch, red potatoes wrapped in a slice of bacon. It isn't my bacon however, but Costco's which isn't bad.


And that is my plate, the brown bowl in the upper right corner is pan sauce.
It was a very good night.

The entry just before (below) this one shows that roast being fabricated.

    Last night it was roast chicken wrapped in home cured pancetta, but I got home from a meeting at 9 not the 8:15 planned on. Meeting ran late, the entrance to the bridge was closed and I had to find another and they are rebuilding the bridge at night. This is a 7 lane wide 3 mile long bridge over the Hudson, so I was in no mood to take pictures of the chicken. Tonight, tomorrow night and Friday night are left overs. Saturday is a sauerbratten that has been in the reefer since Sunday and so it goes.
